How to make a healthy tomato bake Simply Seasonings style!

Ingredients:
250g mince meat of your choice: lamb/ pork/ beef
1 tin of Cannellini beans
1 tin of tomatoes/ passata
4 tsp of Simply Seasoning of your choice, (I prefer Smoky BBQ)
1kg Sweet Potatoes
1 White Onion
1 Yellow Pepper
Knob of butter

Method:

For the sweet potato topping;

1) Peel amd dice your sweet potatoes and cut into cubes 3 - 4cm thick, place them in a pan and boil them until soft.

2) Once your potatoes are soft, drain the water and mash into a smooth mash with a potato masher, then add a knob of butter to taste, then prepare your pie filling.

For the bake filling:
1) Dice your onions, peppers and in a seperate pan, fry on a low heat with a tablespoon of water and fry until soft and golden. Once the peppers and onions are softened add minced meat of your choice and fry on a low- medium heat until cooked through.

2) Ensure your meat is cooked if adding meat and then add your tomatoes or Passata, drain your cannellini beans and add to the mix and allow to simmer for 10 minutes. If you require add salt to taste, this is not necessary.

3) Add 3 teaspoons of a Simply Seasoning of your choice and stir into the sauce mixture and allow to simmer for 3 - 4 minutes

4) Taste to check your flavour, if you would like to add more Simply Seasoning feel free.

To construct your bake:

1) Place the pie filling into an ovenproof dish and spread evenly

2) Add on top of the filling your potato mash and spread evenly and create lines with a fork

3) Place in the oven for 30 minutes until golden.


Note: If you like try adding cheese on top when constructed or some breadcrumbs for extra crunch.

You could also add cherry tomatoes to the sauce for an extra burst of flavour.
